Butternut squash
Here's how to cook butternut squash:
Wash it.
Cut it in half lengthwise.
Scoop out the seeds.
Place it cut side down in a large baking pan.
Pour in 1 cup of water.
Cook at 350 degrees for 1 hour.
Most people cook it for 1 hour. I cook mine longer as I need it very soft. You can turn it over and poke it with a fork to see how done it is. When it cools a bit, scoop it out.
Another way to cook butternut squash:
I know this may sound a little crazy -
but I have found the easiest way to
cook butternut squash is to first peel it -
I use an ordinary vegetable peeler. You
have to have a good vegetable peeler
though. Then I can slice it up, put the
cubes in a pan and boil. If you slice into
smaller cubes, it is the same concept as
cutting potatoes into smaller pieces so
they cook quicker. Then when the squash
is all cooked, you don't have to worry about
scooping it out of the skin. It is ready to
mash or puree.
