16 oz package frozen fruit, defrosted
1/3 cup honey
1. Blend fruit and honey together in blender until smooth. (If you stop now, you will have a delicious pancake syrup!)
2. In a large pan (I used a 12 inch skillet – more surface area means the liquid will evaporate faster), bring mixture to a soft boil, then simmer on low heat for about 45 minutes until mixture is desired thickness.
Makes 1 cup
