2 1/2 cups almond flour
2 large eggs
1/4 cup honey
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vinegar
1/3 cup chopped apples
1/3 cup blueberries
1/3 cup mashed bananas
2 TBL chopped walnuts
cinnamon to taste

Combine ingredients.
Divide batter into 3 parts.

Add apples and cinnamon to one part.
Add bluberries to one part.
Add bananas and walnuts to one part.

Bake 28 minutes at 350.
Fill tins only 2/3 full.
Makes 18 muffins.

Note: other fruits and spices can be used to make endless combinations of muffin flavors.
