BANANA PANCAKE

1 small ripe banana
2 egg
-or-
1 large ripe banana
2 eggs
Grease pan with butter, ghee or acceptable legal oil. Blend egg and
banana well. Dollop a heaping tablespoon of batter on pan and and fry
over medium heat. Flip and cook on other side. I found that these
cooked better as small pancakes.
